This article provides an overview of color measurement in the production of Coca Cola.
In cola production, Coca Cola generally manufactures in two forms - cola syrup and more dilute cola concentrate.
The syrup plants are only located in the US. Cola syrup is measured on an UltraScan VIS in Total Transmittance (TTRAN) with LAV mode. The sample is measured using a 2 mm flow through cell and holder as the cola syrup is highly absorbing (other colors not as much). The 2 mm path length cell allows more signal to come through color syrup allowing a better lot color differentiation.
Most other Coca Cola plants produce cola concentrate. The concentrate is diluted using an internal SOP to approximately beverage level. Color is measured on an UltraScan VIS with a 10 mm transmittance cell and transmittance shelf. Using a cola beverage dilution, a 10 mm cell will differentiate lot color differences.
Inter-instrument agreement is excellent using either method if the Coca Cola SOP is followed.
